If they are set up as lead in Marketo, the Activity should show up as delivering to them, their open and any click throughs. If you are just adding them as an email address, I do not think you will find their activity anywhere.
In the alert you could always add your email address to the "To Other Emails" field temporarily to ensure that they are going through.
Thanks Mike and Taylor. So will this only work if I'm a lead? Because I'm in there as a contact. and I do receive the alerts, but I'm not seeing that information in the activity history.
Michelle you are talking about the sales alert emails? These won't show up in the lead activity history, so the best way as Taylor mentioned is to cc yourself on the alerts. They should be sent for both lead and contact records.
Also, right now Marketo is having trouble with alerts that have the postal code token in them (see this thread: http://community.marketo.com/MarketoDiscussionDetail?id=90650000000PdeAAAS) so if your alerts have that, you may need to remove so they are delivered.
