Here's a possible work-around:
1. Create another field for Lead Owner (let's call this New Lead Owner)
2. Create a campaign that listens for changes in this field. Then in the flow, have "add choices" for each lead owner. If New Lead Owner is X, then Change Owner to X.
3. Add the new field to your form
I created an Idea for this, if you want to upvote it. The suggested workaround is a bit laborious, as it requires changes any time a new employee joins/leaves the team.
