This is due to the fact that your campaign starts with an email task rather than an email. If it starts with a task it will not show up in the compose window.
You will want to go into the campaign and click Edit to switch to the first option to send automatically.
This will allow for the email to show up in your compose window. Even though the language says "automatically" you can still schedule it to go out at a different time.
