I am curious if there is a way to specify an activity type for "Create Task" flow step. Currently, all tasks are created under "Outbound Call" type in SFDC, but sometimes we need to log emails to be sent or already sent.

Out of the box? No. In fact, Professional Services won't do any sort of customization of the Activity connection when I asked them. However, this is possible with some trickery—generally I'll put some distinct string in either the subject or description and then use Salesforce flows to reassign the activity type appropriately.
