How do I have Marketo schedule a task in salesforce 24 hours after an email has been opened?

Tim,

You would want to create a smart campaign.

The Trigger would be:

Opens Email
  • Email Name

The Flow Steps would be:

Wait
  • 24 hours

Create Task
  • All the relevant info you want in there

And that should be about it.

I am using a smart campaign to send out my emails, is that wrong? Should I create a seperate smart campaign?

Nope, you will always use the smart campaign to send the email (so you did that part exactly right!) and would just create a second smart campaign that is called, let's say "Email Task Creator" which will 'listen' for email opens of the email you specify and then execute its flow from there which would be to wait 24 hours and then create the task in Salesforce.
