I need to run a report that shows the last activity date in which a lead/contact was touched via a marketing campaign. Since there is no Last Activity Date field in the smart list columns, how can I run this report in Marketo, not in SFDC.

I don't think a report with custom columns will work for this as there are way too many possible dates.
However, you can add a custom field to the lead record (e.g. Last Activity Date) in which you update its value using the {{system.date}} token every time an activity you want to track occurs. You could then either export a smart list for the time frame on which you want to report with the columns you want to see.
