After a user fills out a form to request a PDF via email and clicks submit, the following process occurs:
1) Sends an automated "Thank you for requesting this document"
2) Along with body copy, a pdf is also attached for the user.
I don't see any options where I can attach a document in my email campaign?

Just $0.02 - This is pretty standard behavior for all ESP's, not unique to Marketo.
The work around is to upload your attachment (Word, PDF, PowerPoint) to the Design Studio. From there copy the Hyperlink URL and paste this into your email. Wah-La - No attachment needed!
