Snippets used in Email "from name" and "from email

We typically use the lead owner token to populate the from name and from email address.  We need to have defaults in place in the event a record has no lead owner.  We are using a specific rep now but clearly if he leaves/changes roles then every email must be updated.  I am avoiding this in the signature portion of the email with a snippet but snippets are not available in those sections.  Has anyone figured out a work around??

I might have a hard time understanding exactly why you need snippets—couldn't you use tokens in the signature instead? 

Something like:

"Let me know if you have any questions,
{{lead.Lead Owner First Name:default=Sales Rep Name Here}} {{lead.Lead Owner Last Name:default=Sales Rep Name Here}}
{{lead.Lead Owner Email Address:default=salesrep@yourcompany.com}}"

Typically we use a generic signature such as "[Your Company Name] Sales" and "sales@___" so this problem can be avoided.

We once setup one of our longtime reps as a default in nurturing emails and it was a nightmare tracking those emails down when he eventually left.

If you don't want to use a general sales address, don't be afraid to make up a name for the default like "Ben Revere." We used Missy Parks for our "miss"assigned  leads.

Then let all the sales folks that "Ben Revere" is actually a sales alias. You'll need to have your IT folks set up the email address to forwards any replies to the right person/group. We actually had it setup to send email to the BDR group so any rep could answer the unassigned lead.
