In a form, is there a way to hide choices if the date has passed?

For example, I want to have a form that allows people to register for an event. I'm going to have a bunch of dates, but as the date is passed, I want that choice to be hidden or removed, yet still have the data of who registered for those dates.

Is this possible with Marketo forms?

Yes, It is possible and can be done with the help of using JavaScript.

You haven't shown which field types you want to use this pattern with nor provided an example form (a live form) so it wouldn't be possible to know what code you need at this point.

At this point, I'm just trying to understand the capabilities of Marketo forms in customizing whether the choices can be hidden or displayed based on a date. Thanks!

Well, the question "will I need to hire someone, or will this be a short code snippet posted on Community" just can't be answered with the information provided.

Nearly anything can accomplished by a skilled (and Marketo-fluent) dev, as you can see from past threads and from Marketo forms that are out in-the-wild... but we need to know the real technical requirements. The quickest way to get there is to show an actual live form and describe the behaviors you want to add.
