It sounds like you might not have your address book sync turned on. To sync your Gmail Address Book, go to Settings > Email Client > Configure. From here, you can check the box next to Sync Address Book. This way anyone you reach out to in Gmail will sync into toutapp.com so you can take advantage of Dynamic Fields.
